SENSUAL PANCAKES

INGREDIENTS:

4oz egg substitute or 2 beaten eggs

3 tbsp oat bran

1 package artifical sweetener

1 tsp butter or margarine (opt)

1 cup of your favorite fruit cut up

Non-stick spray

DIRECTIONS: Mix egg with wheat bran. Let minture sit for 2-3 minutes until liquid is absorbed. Stir well. Spray non-stick pan with spray. Drop spoonful of mixture and flatten into “pancakes”. Cook until edges are dry. Turn carefully and cook other side (30-40) seconds. Serve with fruit or plain, sprinkle sweetener or cinnamon for extra sweetness.

Comments: Even though there are 3 tbsp of Bran, you will not be eating all of these at one sitting.



CAULIFLOWER POTATO SALAD MINUS THE POTATOES

February 4th, 2007

INGREDIENTS:

Large Cauliflower
Large red pepper (diced)

Med red onion (diced)
2-3 Sprigs fresh Rosemary (rough chopped)

1 teaspoon garlic (crushed) or to taste
4-5 hard boiled eggs with yokes removed (chopped), you can keep yokes if you want
1-1/2 dill seed or to taste
3/4-1 cup light mayo or to taste and texture
Salt and Pepper to taste

2-3 tablespoons of relish (optional)

DIRECTIONS:  Trim cauliflower and take off hard stems and cut florets into small pieces.  In a small pot cook until med soft or to your texture. Add all ingredients let cool.  Make the night before.

COMMENTS:  If you have a favorite recipe for potatoe salad, then you can use it also.  Just replace cauliflower for the potatoes.  You can also cook turkey bacon crisp and chop it up and add to it also.



MARINATED SPANISH OLIVES

INGREDIENTS:

24 large unpitted Spanish Olives

2 tablespoons sherry vingear

1 tablespoon extra virgin olive oil

2 teaspoons coriander seeds (crushed)

1 teaspoon dried thyme

1 teaspoon dried rosemary (crushed)

1/2 teaspoon crushed red pepper flakes

2 garlic cloves thinly sliced

Fresh rosemary sprigs (optional)

DIRECTIONS:  combine first 8 ingredients in a bowl.  Cover and marinate in refrigerator at least 8 hours.

SERVINGS: 4 olives  calories 49, carbs 3 gms, protein 0



SPICY CARIBEAN CHICKEN SALAD

February 2nd, 2007

INGREDIENTS:  SALAD
2 cups cut up cooked chicken

1/4 cup chopped fresh cilantro

1 large tomato (chopped)

1 medium avocado (peeled and chopped)

1 small yellow summer squash (chopped)

1 can (15oz) Progresso Black beans or your favorite black beans

leaf lettuce

INGREDIENTS:  DRESSING

1/4 cup lime juice

2 tablespoons olive oil

1 tablespoon honey

1/2 teaspoon chili powder

1/4 teaspoon ground cumin

1/4 teaspoon salt

2-3 drops red pepper sauce or to taste

DIRECTIONS:  mix everything together shake until well blended.

SERVES:  1 serving  Calories 370, Fat 19 gms, Carbs 31 gms, Protein 27 gms

EGG NOG

INGREDIENTS:

1 cup F/F milk or 1% milk

1/4 cup Egg Beaters

1-2 packets of artificial sweetner

3 teaspoons S/F instant vanilla pudding mix powder (if you like it thicker add more

1/4 to 1/2 teaspoons vanilla extract

pinch of nutmeg

DIRECTIONS:  Put everything in a blender, chill for 2 hours or overnight.  Stir or shake before serving

COMMENTS:  You can add  1 teaspoons of Davinci Butter Rum S/F flavored syrup or any other type you like.   This is not a protein drink.  It is not egg less, but the eggs have been pasteurized so they are “safe” for consumption
